What type of AC adaptor goes with the Vital Fitness RB260 recumbent bike?

Check where the adapter plugs in, it may be marked with the voltage and the polarity and may also state the plug size. If it has the voltage try an adapter with that voltage. Try the plug fit without the unit turned on and the adapter not plugged in.
They also make a universal adapter that has a voltage selector on it 3, 4.5, 6, 6.5, 9, and 12 volts so it will cover about anything. They also will have several different plugs on the end of the wire to fit different type sockets. They will also have a reversible plug where it goes into the adapter so you can change the polarity.
The only thing left is the current rating. If the adapter is just for batteries like AA or AAA you shouldn’t have any problems. If it is for bigger batteries you want to go will a larger adapter that will supply 500 ma or more. The universal adapter I have outputs 300 ma. You should feel the adapter and if it is getting very warm go with a bigger one. Bob A
